Funfetti Cookies with Frosting

Serves: Six | Prep: 15 min | Cook: 10 min

Ingredients:

Funfetti Cookies:
1 1/2 cups all-purpose flour
1 Tbsp cornstarch/ cornflour
1/2 tsp baking soda
1/2 tsp salt
1/2 cup butter, room temperature
1/2 cup sugar
1 egg
1 tsp vanilla extract
1/2 cup sprinkles

Frosting:
2 oz butter, room temperature
2 cups powdered/icing sugar
1 tsp vanilla extract
2 Tbsp water

Directions:
In a bowl, whisk flour, cornstarch, baking soda, and salt together, set aside.

Using a stand mixer fitted with a paddle attachment, cream the butter and sugar together until light and fluffy. Add the egg and vanilla and mix on medium speed, scraping down the sides of the bowl as needed. Reduce the mixer to low speed and gradually add the dry ingredients, mixing just until combined. Add the sprinkles and mix until evenly distributed throughout the dough. Refrigerate the dough for at least 30 minutes.

Preheat oven 350°F/180°C. Line two baking trays with baking paper.

Roll approximately 1 Tablespoon of dough into a ball and place on the prepared trays, leaving about 1-inch between each cookie. Bake for 10–12 minutes, or until the edges are lightly browned. Allow the cookies to cool on the baking trays for 5 minutes before transferring them to a wire rack to cool completely.

For the frosting, use a stand mixer fitted with a paddle attachment, add the butter and powdered sugar to the bowl. Start the mixer on low speed until the ingredients are combined, then increase to medium-high speed. Add the vanilla and continue mixing for 5–7 minutes, or until the frosting is smooth, light, and creamy. Once the cookies are completely cool, spread or pipe the frosting over the tops and finish with extra sprinkles.
