Roasted Garlic Spinach Au Gratin

Ingredients:
Roasted Garlic Spinach Au Gratin:
1 head of garlic, Roasted Garlic
2 tsp olive oil
3 Tbsp butter
2 shallots, chopped
1/4 tsp pepper
1/4 tsp nutmeg
2 Tbsp flour
1 1/2 cups full fat milk
5 10 oz boxes/1450g frozen spinach, thawed
1/4 cup parmesan cheese, grated
1/2 cup gruyere cheese, shredded
1 cup mozzarella cheese, shredded
Directions:
Preheat oven 400F/200C. Grease an 11X8 inch baking dish with 1 Tablespoon butter.
Start by roasting the garlic. Slice off the top of the bulb, drizzle with olive oil, and place it in a foil pouch or garlic baking dish. Roast, until golden and soft, about 40 minutes. While the garlic roasts, squeeze the thawed spinach well to remove any excess moisture.
In a skillet over mediumhigh heat, melt the remaining 2 Tablespoons of butter. Add the chopped shallots and cook for 3–5 minutes, until softened. Stir in pepper, nutmeg, and flour, and cook for about a minute, stirring constantly. Gradually pour in the milk while stirring, and continue to cook for 3–5 minutes until the sauce thickens, you’ll know it’s ready when you can run your finger across the back of a spoon and the line stays visible. Add the spinach, roasted garlic, and Parmesan cheese, stirring until everything is well combined. Transfer the mixture to a prepared baking dish and sprinkle the Gruyere and mozzarella evenly on top. Bake for 20–25 minutes, until the cheese is bubbly and golden.
