Bacon Wrapped Scallops with Sriracha Honey

Ingredients:
Bacon Wrapped Scallops:
1 lb uncooked sea scallops, defrosted
Bacon slices, cut in half, one half per scallop
Fresh Parsley, chopped
Sriracha Honey:
1/2 cup honey
1/4 cup Sriracha
3 garlic cloves, minced
3 Tbsp soy sauce
2 Tbsp rice vinegar
Directions:
Start by making the sriracha honey. In a small saucepan, whisk together the honey, sriracha, garlic, soy sauce, and rice vinegar. Heat over medium heat, until it comes to the boil, then reduce the heat and let simmer for 10 minutes. Remove from the heat and let it cool slightly—the mixture will thicken as it cools.
Preheat oven 425F/220C. Line a baking tray with baking paper.
Wrap half a slice of bacon around each scallop and secure it with a toothpick. Arrange the scallops on the prepared tray in a single layer. Brush each one generously with the sriracha honey. Bake for 15–20 minutes, or until the bacon is crispy. Remove from the oven, transfer to a serving dish, drizzle with a little more of the honey mixture, and garnish with fresh parsley.
