Christmas Sugar Cookies with White Chocolate Topping

Ingredients:
Cookies:
1 cup butter, room temperature
1 cup sugar
3 Tbsp milk
1 tsp vanilla extract
1 egg
3 cups all-purpose flour
1 1/2 tsp baking powder
1 tsp salt
White Chocolate Topping:
8 oz white chocolate
Assorted sprinkles
Directions:
In a mixer fitted with a paddle attachment, combine the sugar, butter, milk, vanilla, and egg, mixing until smooth. With the mixer on low, add the flour, baking powder, and salt, and continue mixing until a soft dough forms. Cover the bowl and refrigerate for at least one hour.
Preheat the oven to 400F/200C. Line three baking trays with baking paper.
Turn the chilled dough out onto a well-floured surface and, with floured hands, shape it into a ball. Using a floured rolling pin, roll the dough to about 1/4-inch thick and cut out shapes with a floured cookie cutter. Arrange the cookies on the prepared trays, spacing them about 1-inch apart. Bake for 5–8 minutes, until the edges are lightly browned, then allow the cookies to rest on the tray for 2 minutes before transferring them to a wire rack to cool completely.
For the white chocolate topping, melt the white chocolate over a double boiler, until smooth. Dip each cooled cookie face-down into the chocolate, then use a mini offset spatula or spoon to create a swirled pattern. Finish by decorating with sprinkles.
