Orange Sugar Butter Cookies

Serves: Eight | Prep: 1 hr, 15 min | Cook: 10 min

Ingredients:

Orange Sugar Butter Cookies:
1 cup sugar
2 Tbsp orange zest
1 cup butter, room temperature
1 tsp vanilla extract
2 cups all-purpose flour
2 Tbsp freshly squeezed orange juice

Directions:
In a small bowl, rub the sugar and orange zest together with your fingertips, set aside.
In the bowl of a stand mixer fitted with a paddle attachment, beat the butter with 3/4 cup of the sugar mixture and vanilla, until combined. Reduce the speed and gradually add flour, mixing until the dough starts to come together. Add orange juice and mix just until incorporated. Wrap the dough in plastic wrap and chill for 1 hour.

Preheat the oven to 350F/180C. Line baking trays with baking paper. On a lightly floured surface, roll out the dough to 1/4-inch thick and cut with a cookie cutter. Place the cookies on the prepared tray, sprinkle with the remaining sugar mixture, and bake for 10–12 minutes, or until the edges are lightly golden. Transfer to a wire rack and let cool completely.
