Fresh Ground Horseradish Root

Ingredients:
Fresh Ground Horseradish Root:
1 cup fresh horseradish, peeled and cut into cubes
1/2 cup white vinegar
1/4 tsp salt
Directions:
Peel and cube the horseradish root, then place the pieces into a food processor.
**For a spicier horseradish, allow the chopped root to sit in the processor for 5–10 minutes before adding the vinegar and salt—this resting time helps develop the heat.
When ready, add the vinegar and salt and blend until the mixture reaches your desired consistency. If the horseradish seems too dry, add a little more vinegar and blend again until smooth.
**Be careful when opening the processor, as freshly blended horseradish releases strong fumes that can make your eyes water and take your breath away.
Transfer the horseradish to small airtight jars for storage; opening the jar frequently will cause it to lose potency.
Store in the refrigerator for up to 1 month.
