Apple Tart

Ingredients:

Dough:
2 1/2 cups all-purpose flour
1/2 tsp salt
1 cup cold butter, cubed
1/2 cup cold water
Filling:
2 lbs apples, peeled, cored and thinly sliced
1 tsp lemon zest
3/4 cup sugar, depending on tartness/sweetness of the apples
2 Tbsp milk
2 Tbsp sugar
Directions:
Dough:
Preheat the oven to 350F/180C.
In a food processor, add flour and salt, blitz to combine. Add the cold butter and pulse until the mixture resembles coarse crumbs. With the motor running, pour in 1/4 cup of water, then add 1 tablespoon at a time, until the dough comes together in a ball.
Turn the dough out onto a well floured work surface, divide it in half, and roll out one half to fit a 9-inch pie dish. Carefully transfer the rolled dough into the dish, pressing it gently into the bottom and up the sides.
Filling:
In a large bowl, combine the apples, lemon zest, and sugar. Mix until evenly coated, then transfer into the dough-lined pie dish.
On a floured surface, roll out the second half of the dough and lay it over the filling. Trim any overhanging edges, then crimp with a fork to seal. Cut three small slits in the top crust to allow steam to escape.
Brush the top with milk and sprinkle with sugar. Bake for 40–60 minutes, until the crust is golden brown. Let cool for at least 30 minutes before slicing and serving.
Delicious when served with Vanilla Custard, Three Ingredient Vanilla Ice Cream, and Vanilla Bean Whipped Cream.
