Fried Green Tomatoes

Serves: Six | Prep: 20 min | Cook: 6 min

Ingredients:

Fried Green Tomatoes:
3 green tomatoes, 1/4-inch thick slices
2 large eggs
3/4 cup all-purpose flour
1 cup cornmeal/polenta
3/4 cup panko breadcrumbs
1 tsp garlic powder
1 tsp salt
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp pepper
vegetable/frying oil
Coarse sea salt

Garlic Mayonnaise:
1/2 cup mayonnaise
1 garlic cloves, grated
1 Tbsp fresh parsely

Directions:
Heat vegetable oil in a Dutch Oven over medium heat until it reaches 375F/190C.

While the oil is heating, season the sliced tomatoes with salt and pepper.

Set up a dredging station with three shallow dishes: one with flour, another with whisked eggs, and a third with a mixture of polenta, panko, garlic powder, onion powder, and paprika. Working one slice at a time, dip the seasoned tomatoes first into the flour, then into the eggs, and finally into the cornmeal mixture, making sure each slice is well coated. Carefully place the coated tomatoes into the hot oil, taking care not to overcrowd the pan. Fry for 3-4 minutes per side, or until golden brown. Transfer the fried tomatoes to a paper towel–lined tray to drain and immediately sprinkle with sea salt.

For the garlic mayonnaise, stir together mayonnaise, minced garlic, and chopped parsley, then serve alongside the hot fried tomatoes.
