Vegetable Lo Mein

Serves: Four | Prep: 20 min | Cook: 15 min

Ingredients:

Vegetable Lo Mein:
8 oz spahetti
3 Tbsp soy sauce
2 Tbsp teriyaki
2 Tbsp honey
2 tsp ginger, minced
3 garlic cloves, minced
1 Tbsp sesame oil
1 Tbsp vegetable oil
3 celery stalks, thinly sliced
2 carrots, cut into thin matchsticks
1 onion, thinly sliced
1 bell pepper, thinly sliced
1 8 oz can water chestnuts, drained and chopped
5 scallions, sliced thinly lengthwise

*Additional add-ins: Broccoli florets, corn, frozen peas

Directions:
Cook the spaghetti in a large pot of salted boiling water according to the package directions, then drain and set aside.

In a small bowl, whisk soy sauce, teriyaki sauce, honey, ginger, and garlic together to make the sauce. Set aside.

Heat sesame oil and vegetable oil in a wok over high heat. Add onion, celery, carrots, and pepper. Cook, stirring often, for 5–7 minutes, until the vegetables begin to soften. Add the cooked spaghetti, the sauce mixture, and the water chestnuts, tossing everything together. Continue to cook for about 3 minutes, stirring frequently. Add the scallions and cook for 2 minutes more. Finish with a sprinkle of toasted sesame seeds on top.

*For extra protein, you can easily add shrimp or chicken.
