Apricot Cous Cous

Ingredients:
Apricot Couscous:
1 1/2 cup chicken stock
1/2 tsp salt
1 cup dry couscous
10-12 dried apricots, finely chopped
Directions:
Add the stock and salt to a saucepan and place over high heat. Bring to a boil, then stir in the couscous and dried apricots. Remove the saucepan from the heat, cover with a lid, and let it sit for 10 minutes so the couscous can absorb the liquid. Once ready, fluff gently with a fork to separate the grains, then serve.
