Grilled Marinated Lemon Oregano Chicken

Serves: Four | Prep: 3 hrs, 20 min | Cook: 10 min

Ingredients:

Grilled Marinated Lemon Oregano Chicken:
2 lbs chicken breasts, skinless, boneless
1/2 cup olive oil
1 Tbsp lemon zest
1/2 cup freshly squeezed lemon juice
1/4 cup fresh oregano, chopped
2 tsp fresh thyme, chopped
4 garlic cloves, minced
1 1/2 tsp salt
3/4 tsp pepper
1/4 tsp red pepper flake
2 tsp honey

Directions:
Place the chicken breasts on a cutting board and use a meat mallet to pound them to an even thickness, about 1/2 inch. Repeat with all remaining chicken.

In a large casserole dish (big enough to lay the chicken flat), whisk together the olive oil, lemon zest, lemon juice, fresh oregano, thyme, garlic, salt, pepper, red pepper flakes, and honey.

Add the chicken to the marinade and coat thoroughly. Cover and refrigerate for at least 3 hours, overnight is ideal for the best flavor.

When ready to cook, bring the chicken to room temperature. Preheat the grill or barbecue to medium high heat. Remove the chicken from the marinade and discard the marinade.

Grill the chicken for 4–5 minutes per side, or until fully cooked and nicely charred.
