Bacon Wrapped Goat Cheese Stuffed Dates with a Bourbon Glaze

Ingredients:

Bacon Wrapped Goat Cheese Stuffed Dates:
16 dates
4 oz soft goat cheese, room temperature
8 slices bacon, cut in half

Bourbon Glaze:
1/4 cup maple syrup
1 Tbsp bourbon
1 Tbsp fresh rosemary, minced

Directions:
Preheat oven 400F/200C. Line two baking trays with baking paper.

Using a small knife, split the dates in half lengthwise, being careful not to cut all the way through, then remove and discard the pits.

Stuff each date with goat cheese, gently press the date closed, and wrap with a strip of bacon. Place the wrapped dates seam-side down on the prepared tray.

In a small bowl, whisk together the maple syrup, bourbon, and rosemary to make the glaze. Brush the dates with half of the glaze, then bake for 20–25 minutes, or until the bacon is crisp and caramelized. Remove from the oven and brush with the remaining glaze.

Serve warm or at room temperature, finished with a sprinkle of Candied Pecans and Pomegranate Seeds.
