Bagels with Smoked Salmon and Avocado Cream Cheese

Ingredients:

Bagels with Smoked Salmon:
8 Bagels, cut in half
1 lb smoked salmon
1 large red onion, thinly sliced
1-2 large tomatoes, sliced

Avocado Cream Cheese:
1 cup cream cheese, room temperature
1 Avocado, peeled
1 Tbsp freshly squeezed lemon juice

Directions:
In a bowl, use an electric whisk to beat together the avocado, cream cheese, and lemon juice until smooth and creamy. Spread the mixture evenly on both sides of each bagel. Layer with smoked salmon, red onion, and tomato slices, then place the bagel halves together. Cut in half and enjoy.
