Cucumber Sandwiches with Herbed Cream Cheese

Ingredients:

Cucumber Sandwiches:
1 english cucumber, sliced 1/4-inch thin
16 slices of white bread

Herbed Cream Cheese:
1 cup cream cheese, room temperature
2 Tbsp mayonnaise
2 Tbsp fresh dill, finely chopped
2 Tbsp fresh chives, finely chopped
1 Tbsp fresh parsley, finely chopped
1/4 tsp salt
1/4 tsp pepper

Directions:
In a bowl mix the cream cheese, mayonnaise, dill, chives, parsley, salt, and pepper until well combined. Spread a generous layer of the mixture over each slice of bread. On one slice, arrange about 12 slices of cucumber, leaving a small border around the edges so both the cream cheese mixture and cucumber are visible. Place the other slice of bread on top, cream cheese side down. Trim off the crusts, then cut the sandwich in half and serve.
