Cantaloupe Bread with Brown Sugar Butter Glaze

Serves: 1 loaf | Prep: 15 min | Cook: 1 hr, 30 min

Ingredients:

Cantaloupe Bread:
1 cup cantaloupe puree (See directions)
3/4 cup sugar
1/4 cup vegetable oil
1 egg
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt

Brown Sugar Butter Glaze:
1/4 cup butter
1/4 cup light brown sugar
Coarse salt

Directions:
Preheat oven 350F/180C. Grease or Line a Loaf Tin.

To make the cantaloupe puree, place one peeled and seeded cantaloupe into a blender and blend until smooth. Pour the mixture through a fine mesh sieve. Reserveing the liquid for a Cantaloupe Margarita.

In a large bowl, whisk the cantaloupe puree with sugar, oil, and egg, until well combined.

In a separate bowl, mix the flour, baking soda, baking powder, cinnamon, nutmeg, and salt together. Add the dry ingredients to the wet mixture and stir until just combined. Pour the batter into the prepared loaf tin and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the tin for a few minutes before transferring to a wire rack to cool completely.

While the bread is cooling, make the glaze by whisking butter and brown sugar in a small saucepan over medium heat until the sugar is fully dissolved and the mixture is smooth. Pour the warm glaze over the cooled bread and finish with a sprinkle of coarse sea salt.
