Serves: Eight | Prep: 20 min | Cook: 0 min
Ingredients:
Cantaloupe Margarita Pitcher:
1/4 cup coarse sea salt
1 4lb cantaloupe,
2 cups tequila
1/2 cup Orange Liqueur
1/2 cup freshly squeezed lime juice
Garnish:
Fresh cantaloupe wedges
8 pieces proscuitto
Directions:
Place the prepared cantaloupe on a cutting board, cut in half, peel, and remove the seeds. From one of the halves, cut eight thin wedges and wrap each with a slice of prosciutto to use as garnish. Cut the remaining cantaloupe into chunks and blend until smooth, then strain through a fine mesh strainer.
*Save the cantaloupe puree for Cantaloupe Bread with Brown Sugar Butter Glaze.
To prepare the glasses, place salt on a flat dish and run a lime wedge around the rim of each glass before dipping into the salt.
In a pitcher, combine the fresh cantaloupe juice with tequila, orange liqueur, and lime juice. Stir well. Transfer the mixture to an ice filled cocktail shaker, shake, then strain and pour into prepared glasses. If serving over ice (on the rocks), strain the mixture again before serving. Garnish with the prosciutto wrapped cantaloupe wedges and enjoy!
