Baked Blackberry Brie Wrapped in Puff Pastry

Serves: Six | Prep: 20 min | Cook: 30 min

Ingredients:

Baked Blackberry Brie Wrapped in Puff Pastry:
1 sheet puff pastry
1 whole wheel of brie cheese
1 cup fresh blackberries
2 tsp fresh thyme, chopped
1 tsp lemon zest
3 tsp honey
1 egg

Directions:
Preheat the oven to 400°F / 200°C. Line a baking tray with baking paper.

Place the brie wheel on the prepared tray and lightly score the top with a sharp knife.

In a bowl, add the blackberries and gently mash with a fork. Spoon the mashed blackberries over the brie, then top with lemon zest, thyme, and a drizzle of honey.

In a small bowl, whisk together the egg and 1 Tablespoon of water to make an egg wash.

On a lightly floured surface, roll out the puff pastry into a 12 x 12-inch square. Cut three thin strips from the pastry and braid them. Place the remaining pastry over the prepared brie, tucking the edges underneath. Lay the braided pastry on top, then brush all over with the egg wash.

Bake for 30–40 minutes, until the pastry is golden brown and crisp. Let rest for 10 minutes before serving.

**Tip: The brie can be wrapped in the pastry and refrigerated up to a day ahead, then baked when ready to serve.

Serve with Bruschetta.
