Baked Maple Pumpkin

Ingredients:
Baked Maple Pumpkin:
3 lb small pumpkin
4 Tbsp maple syrup
2 Tbsp dark brown sugar
2 Tbsp butter
1 tsp pumpkin pie spice
1/2 tsp salt
1/4 tsp pepper
Directions:
Preheat the oven to 400F/200C. Line a baking tray with baking paper. With a sharp knife cut the pumpkin in half lengthwise, then scoop out and discard the seeds.
Place the halves cut side up on the prepared tray. To each half, add 2 Tablespoons of maple syrup, 1 Tablespoon of dark brown sugar, 1 Tablespoon of butter, 1/2 teaspoon of pumpkin pie spice, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper. Bake for 40–60 minutes, until the pumpkin is soft and the flesh easily pulls away from the skin. Serve warm.
