Caramelized Onion Blue Cheese Spread
Serves: Eight | Prep: 40 min | Cook: 10 min
Ingredients:
Caramelized Onion Blue Cheese Spread:
1/2 Tbsp butter
1/2 cup, 1 small onion, thinly sliced
1/4 tsp sugar
1/4 tsp pepper
8 oz cream cheese, room temperature
1/2 cup blue cheese, room temperature
1/2 tsp Worcestershire sauce
2/3 cup walnuts, finely chopped
1/2 tsp dried parsley
Directions:
Melt butter in a skillet over medium heat. Add the onions and cook for about 5 minutes, stirring occasionally, until they are soft and lightly golden. Reduce the heat, then stir in the sugar and pepper. Continue cooking for another 5 minutes, stirring now and then, until the onions are caramelized and slightly browned. Remove from the heat and let cool slightly.
In a mixing bowl, combine the cream cheese, blue cheese, caramelized onions, and Worcestershire sauce. Mix until everything is well blended and smooth. Shape the mixture into a ball, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes to firm up.
On a flat plate, mix together the finely chopped walnuts and dried parsley. When ready to serve, unwrap the chilled cheese ball and roll it in the walnut mixture, pressing gently so it is fully coated before placing on a serving dish.
