Thyme Cheddar Crackers

Ingredients:

Thyme Cheddar Crackers:
1/2 cup butter, room temperature
3 cups sharp cheddar cheese, shredded
1 egg
1 tsp dijon mustard
1 tsp fresh thyme
1/2 tsp salt
1 1/4 cup all-purpose flour
coarse salt

Directions:
In a food processor, pulse together butter, cheese, egg, mustard, salt, and thyme until smooth. Add the flour and pulse again until the mixture comes together into a dough. Turn the dough out onto a lightly floured surface and shape it into a ball. Cut the dough in half and roll each half into a log about 1-1/2- inches wide and 6-inches long. Wrap both logs tightly in plastic wrap and refrigerate until firm, at least 4 hours.

When ready to bake, preheat the oven to 350F/180C. Line a baking tray with baking paper.

Unwrap the dough and slice it into rounds about 1/4 to 1/2-inch thick. Place the slices on the prepared tray, spacing them about an inch apart. Bake for 15–20 minutes, or until the edges are golden brown. Remove from the oven, sprinkle lightly with coarse salt, and let them cool on a wire rack before serving.

Tip: The dough can be frozen for up to 2 months.
