Cilantro Lime Skillet Shrimp

Serves: Six | Prep: 15 min | Cook: 5 min

Ingredients:

Cilantro Lime Skillet Shrimp:
1.5 lbs uncooked shrimp, peeled and deveined
1/2 tsp salt
1/4 tsp pepper
4 Tbsp butter, divided
4 garlic cloves, minced
1/2 tsp coriander powder
2 tsp lime zest
2 Tbsp freshly squeezed lime juice
1/4 cup fresh cilantro, chopped
2 scallion, thinly sliced

Directions:
Pat the shrimp dry with a paper towel and season with salt and pepper.

In a Cast Iron Skillet, melt 3 Tablespoons of butter over medium heat. Add the shrimp, garlic, and coriander powder. Cook for 3 to 5 minutes, stirring occasionally, until the shrimp turn pink and are just cooked through. Stir in the lime zest, lime juice, and the remaining 1 Tablespoon of butter until everything is coated well.

Remove the skillet from the heat and top with fresh cilantro, sliced scallions, and lime wedges before serving.

Serve with Rice or Dutch Oven Bread.
