Eggnog Cookies with Spiced Rum Glaze
Serves: Makes three dozen | Prep: 20 min | Cook: 25 min
Ingredients:
Eggnog Cookies:
1 cup butter
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1/2 cup light brown sugar
1/4 cup sugar
1 egg
1 tsp vanilla extract
1/2 cup Eggnog
Spiced Rum Glaze:
1 cup powdered/icing sugar
2 Tbsp Eggnog
1 Tbsp spiced rum
Christmas Sprinkles
Directions:
Preheat oven to 350F/180C. Line three baking trays with baking paper.
In a saucepan over medium heat, melt the butter and cook for about 10 minutes, stirring occasionally, until it turns golden brown. Set it aside to cool slightly.
In a separate bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt.
In a mixer fitted with a paddle attachment, combine the browned butter, sugars, eggs, and vanilla until smooth. With the mixer on low, add the dry ingredients, alternating with the eggnog. Beginning and ending with the dry ingredients.
Using a small cookie scoop, portion the dough onto the prepared trays and bake for 12–15 minutes, until the edges are lightly golden. Allow the cookies to cool on the tray for 1–2 minutes before transferring them to a wire cooling rack.
To make the glaze, whisk together the powdered sugar, eggnog, and spiced rum, then drizzle it over the cooled cookies and finish with a scatter of sprinkles.
