Lime Bundt Cake with Lime Glaze

Ingredients:
Lime Bundt Cake:
2 1/2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1 cup butter, room temperature
1 ¼ cup sugar
3 eggs
1/4 cup vegetable oil
1/2 cup freshly squeezed lime juive
2 tsp lemon zest
1 tsp vanilla extract
3/4 cup buttermilk
Lime Syrup:
4 Tbsp freshly squeezed lime juice
3 Tbsp sugar
Lime Glaze:
1 cup powdered/icing sugar
1-2 Tbsp freshly squeezed lime juice
Directions:
Preheat oven 350°F/180°C. Grease a bundt pan well.
In a medium bowl whisk the flour, baking powder, and salt together.
In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar together until light and fluffy. Add the eggs and mix until well combined. Pour in the vegetable oil, lime juice, lime zest, and vanilla extract, mixing until smooth.
Reduce the mixer speed to low and add the flour mixture alternately with the buttermilk, beginning and ending with the flour mixture. Mix only until everything is combined and be careful not to overmix. Pour the batter into the prepared bundt pan and bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
While the cake bakes, prepare the lime syrup. In a small saucepan over medium heat combine the lime juice, water, and sugar. Stir until the sugar completely dissolves, then remove from the heat and set aside.
Once the cake is baked, let it cool in the pan for about 10 minutes before carefully inverting it onto a wire rack. Using a wooden skewer, poke small holes all over the warm cake and slowly pour the lime syrup over the top, allowing it to soak in. Let the cake cool completely.
To make the glaze, whisk the powdered sugar with the lime juice, starting with 1 Tablespoon of juice and adding more as needed until you reach your desired consistency. Drizzle the glaze over the cooled bundt cake.
