Sausage with Caramelized Onion Gravy

Ingredients:
Sausage with Caramelized Onion Gravy:
1.5 lbs sausage links
1 Tbsp olive oil
1 Tbsp butter
3 medium onions, thinly sliced
1 tsp brown sugar
1 tsp salt
1/2 tsp pepper
2 Tbsp red wine
1 Tbsp balsamic vinegar
2 cups beef stock
1 tsp Worcestershire sauce
1/2 tsp Dijon mustard
1 tsp fresh thyme
Directions:
Preheat oven 350F/180C. Line a baking tray with baking paper.
Place the sausage links on the prepared tray and bake for 20–25 minutes, until cooked through. Let them cool slightly, then cut into bite-sized pieces.
Meanwhile, heat the oil and butter in a skillet over medium heat. Add onions and cook for 8–10 minutes, stirring occasionally, until soft and lightly browned. Reduce the heat, add sugar, salt, and pepper. Continue to cook for another 10–12 minutes, stirring occasionally, until the onions are deeply caramelized. Pour in the red wine and balsamic vinegar to deglaze the pan, scraping up any browned bits, and cook for 2 minutes. Add the stock, Worcestershire sauce, mustard, and thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes. Stir in the sliced sausage and cook until heated through. Garnish with fresh parsley.
