Turkey Meatloaf with a Sweet & Savory Brown Sugar Dijon Glaze

Ingredients:
Turkey Meatloaf:
1 1/2 lb ground turkey
1 onion, finely chopped
1 egg
1/2 cup tomato puree/passata
1 tsp salt
1/2 tsp pepper
1 cup fresh breadcrumbs
Glaze:
3 Tbsp light brown sugar
3 Tbsp white vinegar
2 Tbsp worcestershire sauce
2 Tbsp tomato paste
1 Tbsp dijon mustard
Directions:
Preheat oven 350F/180C. Line a baking tray with baking paper.
In a large bowl, mix together the turkey, onion, egg, tomato purée, salt, and pepper until just combined. Gently fold in the fresh breadcrumbs, then transfer the mixture to the prepared tray and shape it into a loaf.
In a small bowl, stir together all of the glaze ingredients and spread half of the glaze evenly over the top of the meatloaf. Bake for 20 minutes, then remove from the oven and spread the remaining glaze over the top. Return to the oven and cook for another 30–40 minutes, or until the internal temperature reaches 165F/74C.
Let the meatloaf rest for 5 minutes before slicing and serving.
