Vegetable Vinaigrette Salad

Ingredients:
Vegetable Salad:
2 cups cauliflower, florets
2 cups cherry tomatoes
2 cups carrots, sliced
1 cup celery, sliced
1 bell pepper, cubed
1/2 cup red onion, finely chopped
Vinaigrette:
3/4 cup extra virgin olive oil
1/2 cup red wine vinegar
1 lemon, juiced
1 garlic clove, pressed or finely minced
2 tsp dijon mustard
2 tsp Italian Seasoning
2 tsp sugar
1/2 tsp salt
1/4 tsp pepper
Directions:
Make the vinaigrette by adding oil, vinegar, lemon juice, garlic, mustard, italain seasoning, sugar, salt, and pepper in to a jar with a tightly fitted lid. Shake well.
To a large bowl add cauliflower, tomatoes, carrots, celery, bell pepper, and onion. Top with 3/4 of the dressing. Mix well, cover and place in the refrigerator for at least 4 hours or over night. Before serving top with remaining dressing and stir.
