Wild Garlic Pesto

Ingredients:

Wild Garlic Pesto:
3 full packed cups fresh wild garlic leaves
1/3 cup parmesan cheese, grated
2 Tbsp pine nuts or walnuts
1/2 tsp salt
1/4 tsp pepper
1/3 cup extra virgin olive oil

Directions:
Add the wild garlic leaves, parmesan cheese, pine nuts, salt, and pepper to a food processor. Blend until everything forms a rough green paste. With the motor running, slowly drizzle in the olive oil until the pesto reaches your desired consistency, stopping to scrape down the sides of the bowl as needed. Taste and adjust seasoning if necessary.

Freezing Instructions:
Spoon the pesto into clean ice cube trays, cover, and freeze until solid. Once firm, pop the cubes out and transfer them to a freezer bag. Use whenever you need a quick burst of fresh flavor.
