Almond Black Cherry Rye Old Fashion

Ingredients:
Almond Black Cherry Sauce:
1 14oz can black cherries in syrup
1 Tbsp cornstarch/cornflour
2 Tbsp sugar
1 Tbsp freshly squeezed lemon juice
1/2 tsp almond paste
Rye Old Fashion:
2 cups rye
1/2 cup freshly squeezed orange juice
1/4 cup almond black cherry sauce
16 dashes Angostura bitters
1 bottle sparkling water, chilled
Garnish:
3 almond black cherries on a cocktail skewer

Directions:
Start by draining the syrup from the cherries, keeping both the syrup and the cherries aside. Take 4 tablespoons of the cherry syrup and place it in a bowl, then whisk in the cornstarch until smooth and fully combined. In a saucepan, combine the remaining syrup with the sugar and bring it to a boil. Reduce the heat, then whisk in the cornstarch mixture. Add the cherries and cook for 2–3 minutes, stirring occasionally, until the mixture thickens. Remove from the heat and stir in the lemon juice and almond paste.
Next, set aside 24 cherries and skewer three onto each of eight cocktail sticks.
To make the drink, combine rye, orange juice, almond black cherry syrup, and bitters in a pitcher and stir well. Pour the mixture into a lowball glass filled with ice, then top with 3–4 ounces of sparkling water. Garnish each glass with the skewered cherries and serve immediately.
