Ingredients:
Carrot, Peanut, Raisin Salad:
1 lb carrots, cleaned and shredded
2 Tbsp extra virgin olive oil
1 tsp Dijon mustard
1 Tbsp freshly squeezed lemon juice
2 tsp honey
1/2 tsp salt
1/4 tsp pepper
1 Tbsp fresh parsley, finely chopped
1 Tbsp fresh cilantro, finely chopped
2 scallions, thinly sliced
2 Tbsp raisins
2 Tbsp salted peanuts, roughly chopped
Directions:
In a large bowl, whisk together the olive oil, Dijon mustard, fresh lemon juice, honey, salt, and pepper until the dressing is smooth and well combined. Add the shredded carrots, fresh parsley, cilantro, scallions, and raisins, then toss until everything is evenly coated in the dressing. Cover and refrigerate for at least 10 minutes to allow the flavors to meld. Just before serving, sprinkle the chopped peanuts over the top for a delicious crunch.
