Cheese Stuffed Padron Peppers Wrapped with Prosciutto

Ingredients:
Cheese Stuffed Padron Peppers Wrapped in Prosciutto:
20 padron peppers
1 block peppered cheese
5 slices, prosciutto
1 Tbsp olive oil
Lime
Coarse Sea Salt
Directions:
Prepare the peppers: with a sharp knife cut a slit down the pepper, starting at the top and ending near the end of the pepper, no don’t cut through. Also, there is no need to remove the seeds.
Prepare the cheese. Cut the cheese into 1-inch-long rectangles, about 1/4-inch thick.
Prepare the prosciutto. Cut the prosciutto into four equal pieces by first slicing it in half lengthwise, then cutting each strip in half crosswise.
Stuff each pepper with a piece of cheese. Wrap the stuffed pepper with a piece of the proscuitto.
Heat oil over medium high heat. Add wrapped peppers and cook for 6-8 minutes, turning the pepper over after 2-3 minutes. Once crispy and softened remove from heat and top with fresh lime juice and coarse sea salt.
