Chili and Cheese Jalapeno Poppers with Chive Sour Cream

Ingredients:
Chili and Cheese Jalapeno Poppers:
10-12 jalapeno peppers
1/2 cup garlic and chive cream cheese, room temperature
1/2 cup cheddar cheese, shredded
1/4 cup chili heatwave tortilla chips
Spray oil
Chive Sour Cream:
1 cup sour cream
1/4 cup fresh chives, minced
1 lime, juiced
Directions:
Preheat the oven to 400F/200C. Line a baking tray with baking paper.
Cut the jalapeños in half lengthwise and remove the seeds and membranes, then place them cut side up on the prepared tray.
Crush the tortilla chips into fine crumbs and set aside.
In a bowl mix cream cheese and cheddar until well combined. Fill each jalapeño half with the cream cheese mixture, then sprinkle generously with the crushed tortilla chips and lightly spray with oil. Bake for 5–8 minutes, until the filling is melted and the tops are lightly browned. Remove from the oven and finish with a little more crushed tortilla chips.
To make the chive sour cream dip, stir together the sour cream, chives, and lime juice in a small bowl. Serve the warm poppers with the dip on the side.
