Chorizo Cheddar Dip

Ingredients:
Chorizo Cheddar Dip:
1/2 cup chorizo, chopped
1/2 cup red bell pepper, finely chopped
1 jalapeno, minced
2 Tbsp flour
1/2 cup whole milk
1/2 cup beer
2 cups mature cheddar cheese, shredded
1/2 cup gruyere cheese, shredded
2 scallions, thinly sliced
2 Tbsp fresh cilantro, chopped
Directions:
Heat a large skillet over medium high heat and cook the chorizo for 5–7 minutes, breaking it into crumbles, until browned and crispy. Transfer the chorizo to a plate, leaving the drippings in the skillet. Add the peppers and cook for 2–3 minutes, until softened. Sprinkle in the flour and whisk continuously for 1–2 minutes to cook out the raw flour taste. Slowly pour in the milk and beer, whisking constantly until the mixture is smooth and thickened, about 5–6 minutes. Stir in the cheeses until completely melted and creamy. Return most of the cooked chorizo to the skillet, reserving a small amount for garnish, and stir until evenly combined. Top with the remaining chorizo, sliced scallions, and fresh cilantro, then serve warm with tortilla chips.
