Beer Braised Chicken Drumsticks with Olives & Corn

Ingredients:
Beer Braised Chicken Drumsticks with Olives and Corn:
2 Tbsp olive oil
1 onion, chopped
3 garlic cloves, minced
1 tsp paprika
1/2 tsp pepper
1 12oz lager beer
1/3 cup tomato paste
1/2 cup olive brine
1 cup pimiento stuffed green olives
2 lbs chicken drumsticks
3 ears of corn, cut into wheels
1/4 cup fresh cilantro, chopped
Directions:
Preheat the oven to 350°F /180°C.
Heat the olive oil in a Dutch oven over medium heat. Add the chopped onion and cook for 3–5 minutes, stirring occasionally, until softened. Stir in the garlic, paprika, and pepper, and cook for another 30–60 seconds until fragrant. Add the beer, tomato paste, olive brine, and pimiento stuffed green olives, stirring until the tomato paste has dissolved. Bring the mixture to a gentle boil, then nestle the chicken drumsticks into the sauce. Cover the Dutch oven with a lid and transfer it to the preheated oven.
Bake for 70 minutes. Carefully remove the pot from the oven, add the corn wheels, and return it to the oven, covered, for an additional 20 minutes, or until the chicken is cooked through and tender and the corn is perfectly cooked. Sprinkle with freshly chopped cilantro just before serving
