Black Cherry Marzipan Crostata

Ingredients:

Black Cherry Marzipan Crostata:
Dough:

1 1/2 cups all-purpose flour
2 Tbsp sugar
1 tsp lemon zest
1/2 tsp salt
1/2 cup cold butter, cubed
1/4 cup cold water

Filling:
4 cups cherries, pitted
3 Tbsp light brown sugar
1 1/2 tsp cornstarch
1/2 cup marzipan, diced small
1 egg
Powdered/ Icing sugar

Directions:
In a food processor, combine the flour, sugar, zest, and salt. Pulse a few times to mix. Add the butter and pulse until the mixture looks like coarse crumbs.

With the motor running, slowly add the cold water through the feed tube. Process just until the dough begins to come together. Turn the dough out onto a floured surface, shape it into a disk, wrap in plastic wrap, and refrigerate until firm, at least 1 hour.

Preheat the oven to 400°F/200°C. Line a baking tray with parchment paper.

On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer it to the prepared tray.

Dust the work surface with a little powdered sugar and roll the marzipan into a 9-inch circle, about 1/8 - 1/4- inch thick, then carefully place it over the pastry dough.

In a medium bowl, toss the pitted black cherries with the brown sugar and cornstarch until evenly coated, then spoon the mixture over the marzipan, leaving a 1 1/2-inch border around the edge. Fold the edges of the dough over the filling, pleating as needed and gently pinching any cracks to seal. Whisk together the egg and 1 Tablespoon of water to make an egg wash, then brush it over the exposed crust and sprinkle with coarse brown sugar. Bake for 20–30 minutes, or until the crust is golden brown and the cherries are bubbling and tender. Let the crostata rest for 10 minutes before slicing and serving warm or at room temperature.

Serve with Vanilla Custard, Three Ingredient Vanilla Ice Cream, and Vanilla Bean Whipped Cream.
