Harissa Beer Can Barbecue Whole Chicken

Ingredients:
Harissa Beer Can Barbecue Whole Chicken:
4 lbs whole chicken
2 Tbsp harissa paste
1 Tbsp honey
1 Tbsp olive oil
1 Tbsp freshly squeezed lemon juice
3 garlic cloves, grated
1 tsp salt
1/2 tsp pepper
1 lager beer can
Directions:
Preheat the barbecue to medium high heat, about 400°F/200°C. This recipe can also be prepared in the oven.
In a small bowl, combine the harissa paste, honey, olive oil, lemon juice, minced garlic, salt, and pepper. Rub the mixture generously all over the chicken, making sure to coat the inside cavity and carefully work some of the marinade under the skin for maximum flavor. For even deeper flavor, cover and refrigerate the chicken for several hours or overnight.
Open the can of beer and place the chicken upright over the can so that it stands securely. Transfer the chicken to the barbecue and cook for approximately 1 hour and 20 minutes, or until the thickest part of the thigh reaches an internal temperature of 165°F/74°C. Carefully remove the chicken from the grill and allow it to rest for 10 minutes before carving and serving.
