Mango Ham Glaze

Serves: Twelve | Prep: 15 min | Cook: 45 min

Ingredients:

Ham:
6lbs center cut, unsmoked ham, boiled
15-20 whole cloves

Mango Glaze:
4 garlic cloves
3/4 cup mango chutney
1/4 cup light brown sugar
3 Tbsp dijon mustard
1 tsp orange zest
2 Tbsp freshly squeezed orange juice


Directions:
Preheat oven 325F/ 160C. Line a baking tray with aluminum foil.

Take ham from the water. With a sharp knife, remove excess fat, leaving a thin layer of fat on top. Score the fat, diagonally, in the opposite direction to create a crossing pattern. Insert whole cloves at the crossing. Place ham onto the prepared tray.

To make the glaze add garlic cloves to a food processor with a steel blade. Process until minced. Add chutney, sugar, mustard, orange zest and juice. Pulse until combined.

Pour glaze over studded ham. Bake, 45 minutes. Let rest 10 minutes before slicing.
