Homemade Carrot Juice

Homemade Carrot Juice:
2 lbs carrots, cleaned and trimmed
Directions:
Chop the carrots into 1–2 inch pieces. Add the chopped carrots to a food processor. Pulse and slowly pour in about 1/2 cup of cold water to help it blend. Continue processing until it forms a thick purée. Scrape the sides down as needed. Adding more water as needed.
Set a fine mesh strainer over a bowl or large measuring cup. Pour the carrot purée in and press or squeeze to extract the juice.
Save the puree to make Carrot, Orange, and Cottage Cheese Muffins
