Caramelized Onion, Pear and Blue Cheese Tart

Serves: Six | Prep: 20 min | Cook: 35 min

Ingredients:

Caramelized Onion, Pear & Blue Cheese Tart:
1 sheet puff pastry, thawed
1 Tbsp butter
1 red onion, thinly sliced
1 tsp fresh thyme, minced
1/4 tsp salt
1 lb pears
2 gently packed cups argula/rocket
1/2 cup gouda cheese, shredded
3/4 cup blue cheese, crumbled
1/4 cup Roasted Walnuts, roughly chopped
1-2 Tbsp honey
Fresh thyme sprigs

Directions:
Preheat oven 400F / 200C and line a baking tray with baking paper.

Melt butter in a skillet over medium-high heat. Add onions, minced thyme, and salt. Cook for 8–10 minutes, stirring occasionally, until the onions are soft and lightly caramelized, then remove from the heat.

While the onions are cooking, prepare the pastry. On a lightly floured surface, roll the pastry out into a roughly 12 x 16–inch rectangle. Transfer it to the prepared baking tray. If needed, gently roll the edges inward to create a rustic border, or if using ready-rolled puff pastry, simply score a border around the edge with a sharp knife.

Prepare the pears by cutting them in half, removing the stems and cores, and slicing each half into thin slices. Spread the caramelized onions evenly over the pastry, staying within the border. Scatter the arugula over the onions, then sprinkle on the shredded Gouda and blue cheese. Arrange the pear slices on top in two overlapping rows running lengthwise down the tart.

Bake for 20–25 minutes, until the pastry is puffed and golden brown. Remove from the oven and immediately top with the roasted walnuts, a light drizzle of honey, and a few fresh thyme sprigs. Let the tart cool for a few minutes before slicing and serving.
