Pear, Ginger, and Wine Chutney

Serves: 2 cups | Prep: 10 min | Cook: 35 min

Ingredients:

Pear, Ginger, and Wine Chutney:
1 Tbsp butter
1 onion, finely chopped
3 cups pears, peeled, cored and finely chopped
1 Tbsp fresh ginger grated
1/4 cup dry white wine
1/2 cup white wine vinegar
1/3 cup light brown sugar
1 Tbsp freshly squeezed lime juice

Directions:
Melt butter in a saucepan over medium heat. Add onion and cook for 3–5 minutes, until softened. Stir in the pears and ginger and cook for another 3–4 minutes. Pour in the wine and let it cook for 2 minutes before adding the vinegar, sugar, and lime juice. Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 25–30 minutes, stirring occasionally, until the pears are soft and the chutney has thickened. Allow it to cool completely before serving, as it will continue to thicken as it cools.
