Penne Alla Vodka

Serves: Six | Prep: 15 min | Cook: 25 min

Ingredients:

Penne Alla Vodka:
1 lb penne pasta
1 Tbsp butter
1 Tbsp olive oil
1 onion, finely chopped
8 prosciutto slices, chopped
3 garlic cloves, minced
1/2 tsp red pepper flake
1/2 tsp pepper
1/2cup vodka
1 can chopped tomatoes
2 Tbsp tomato paste
1/2 cup sun dried tomatoes, chopped
1/2 cup cream
1 cup frozen peas
1/4 cup Parmesan cheese
Fresh basil

Directions:
Heat the oil and butter in a Dutch oven over medium heat. Add onions and prosciutto, and cook for 4–5 minutes until the onions soften and the prosciutto becomes slightly crisp. Stir in the garlic, red pepper flakes, and black pepper, cooking for another minute, until fragrant. Pour in the vodka to deglaze the pan, scraping up any browned bits, and let it cook until reduced by half. Add the tomato paste, chopped tomatoes, and sun-dried tomatoes, stirring everything together. Let the sauce simmer gently for 15–20 minutes, stirring occasionally.

While the sauce cooks, bring a large pot of salted water to a boil and cook the pasta according to the package directions for al dente. Before draining, reserve 1/2 cup of the pasta water.

Reduce the sauce heat to low and stir in the cream, Parmesan cheese, peas, and the cooked pasta. Toss everything together and cook for 2–3 minutes, adding a splash of reserved pasta water if the sauce becomes too thick. Serve topped with freshly grated Parmesan and torn basil.
