Slow Cooker White Chili Chicken

Ingredients:
Slow Cooker White Chili Chicken:
1.5 lbs chicken breasts, skinless , boneless
2 green bell peppers, chopped
1 onion, chopped
1 jalapeno pepper, sliced
1 1/2 cups frozen corn
2 14oz cannellini beans, drained and rinsed
1 jar pickled jalapenos
4 cups chicken stock
1 tsp paprika
1 tsp cumin
1 tsp salt
1/2 tsp chili powder
1/2 tsp dried oregano
1/2 tsp garlic powder
1/4 tsp pepper
1 cup cream cheese, room temperature
1 cup white cheddar cheese, shredded
1/2 cup fresh cilantro, chopped
Garnish:
Avocado
Lime juice
Sliced Jalapenos
Thinly Sliced Scallions
Chopped Fresh Cilantro

Directions:
Add chicken, bell peppers, onion, fresh and pickled jalapeños, corn, beans, stock, paprika, cumin, salt, chili powder, and black pepper to your slow cooker and give everything a good stir to combine. Cover and cook on high for 4–5 hours or low for 6–7 hours, until the chicken is tender and cooked through.
Carefully remove the chicken, shred it using two forks, then return it to the slow cooker. Add the cream cheese, cheddar cheese, and cilantro, stirring until the cheeses are melted and the chili is creamy and well blended.
Serve hot with a squeeze of fresh lime juice and top with avocado, sliced jalapeños, scallions, and extra fresh cilantro.
