Potato Skins

Ingredients:
Potato Skins:
5 baked potatoes, cooked and cooled
4-5 slices bacon, cooked
3 Tbsp olive oil, divided
1/2 tsp dried parsley
1/4 tsp garlic powder
1/4 tsp salt
1 cup cheddar cheese, grated
3-4 Tbsp sour cream
2 Tbsp scallions, thinly sliced
1 Tbsp fresh chives, minced
Directions:
Grease a baking tray with 1 Tablespoon of olive oil and place it in the oven while it preheats to 475F/240C.
Cut the cooked potatoes in half lengthwise and carefully scoop out the flesh, leaving about a 1/4-inch layer in the bottom so the skins hold their shape.
In a bowl, mix the remaining 2 Tablespoons of olive oil, parsley, salt, and garlic powder together. Arrange the potato skins face down on the hot baking tray and brush the skin sides with about one-third of the oil mixture. Bake for 7 minutes, then flip the potatoes flesh side up and brush with the remaining oil mixture. Return to the oven for another 7 minutes until crisp.
Remove from the oven, fill each skin with cheese and bacon, and bake for an additional 2 minutes, just until the cheese is melted and bubbly.
Transfer to a serving tray, dollop with sour cream, and finish with scallions and chives.
