Pickled Beets and Smoked Salmon Roll-ups

Ingredients:

Pickled Beets and Smoked Salmon Roll-ups:
1 cup Pickled Beets, drained
1/2 cup cream cheese
1/4 cup fresh dill
3-4 large soft tortillas
8 oz smoked salmon

Directions:
Add the beets, cream cheese, and dill to a food processor and blend until smooth and creamy. Spread the beet mixture evenly over flour tortillas, leaving a 1-inch boarder. Lay the salmon on top, again leaving about a 1-inch border around the edges. Roll the tortillas up tightly, then slice into 1-inch thick pinwheels and serve.
