Shrimp Scampi with Zoodles

Ingredients:
Shrimp Scampi with Zoodles:
4 medium zucchini
1.5 lb raw shrimp, peeled and deveined
1 tsp salt
1/2 tsp pepper
2 Tbsp olive oil
6 garlic cloves, minced
2 Tbsp butter
1 tsp lemon zest
1 Tbsp freshly squeezed lemon juice
1 cup cherry tomatoes
1/2 cup white wine
1/4 tsp red pepper flake
1/4 cup fresh parsley, chopped
1/4 cup parmesan cheese, grated
Directions:
Wash the zucchini and trim off the ends. Use a Spiralizer to turn the zucchini into zucchini pasta. Set aside.
Pat shrimp dry with a paper towel and season with the salt and pepper.
Heat oil in a large skillet over medium-high heat. Place the shrimp in a single layer in the skillet and let them cook without moving for 1 minute. Add the garlic, stir, and cook for another 30-60 seconds. Stir in the butter, lemon zest, lemon juice, tomatoes, white wine, and red pepper flakes. Let everything simmer for 2-3 minutes, or until the shrimp are fully cooked. Add the chopped parsley and zucchini noodles to the skillet, cooking for 1 more minute while stirring well. Top with freshly grated parmesan and serve immediately.
