Spicy Roasted Chickpeas

Serves: Four | Prep: 10 min | Cook: 35 min

Ingredients:

Spicy Roasted Chickpeas:
1 can chickpeas, drained, reserve juice
1 Tbsp olive oil
1/2 tsp cumin
1/2 tsp paprika
1/4 tsp garlic powder
1/4 tsp chili powder
1/4 tsp salt
1/4 tsp pepper

Directions:
Preheat the oven to 400°F/200°C. Line a baking tray with baking paper.

Place the drained chickpeas between two pieces of paper towels and gently roll them back and forth to dry them slightly. Transfer the chickpeas to the prepared baking tray and drizzle with olive oil. Sprinkle with cumin, paprika, chili, garlic powder, salt, and pepper, then toss everything together until the chickpeas are evenly coated. Spread them out in a single layer and roast for 35–40 minutes, stirring halfway through, until they are crisp and dry.

Let the chickpeas cool before serving so they become even crunchier.

Store any leftovers in an airtight container in the refrigerator for up to one week.
