Stovetop Chicken Fajitas with Peppers and Onions

Ingredients:
Stovetop Chicken Fajitas with Peppers and Onions:
1.5 lbs chicken breasts, boneless amd skinless,cut into strips
1 red bell pepper, sliced
1 onion, sliced
1 jalapeno pepper, minced
3 Tbsp olive oil, divided
2 tsp chili powder
1 tsp paprika
1 tsp dried oregano
1 1/2 tsp salt, divided
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper
1 cup salsa
1 14oz can mixed beans, drained and rinsed
1/2 tsp sugar
1/4 tsp pepper
Directions:
Start by mixing the chicken with 1 Tablespoon of olive oil, chili powder, paprika, dried oregano, 1 teaspoon salt, cumin, garlic powder, onion powder, and cayenne pepper in a large bowl until well coated.
Heat a skillet over medium high heat and add the seasoned chicken. Cook for 6–8 minutes, stirring occasionally, until the chicken starts to brown. Add the jalapeno and cook for another minute. Reduce the heat to low, then stir in the salsa and beans. Let the mixture simmer, stirring occasionally, for 10–15 minutes or until the chicken is cooked through.
While the chicken simmers, heat the remaining 2 Tablespoons of olive oil in a separate skillet over medium heat. Add the bell pepper and cook for 3–5 minutes. Then add the onions along with the remaining 1/2 teaspoon of salt, pepper, and sugar. Continue cooking for another 3–5 minutes until the vegetables are tender.
Serve the chicken and vegetables with Yellow Turmeric Rice, and top with sliced scallions, chopped fresh cilantro, and sliced avocado.
