Apple Cardamon Crumble with Date and Cranberry

Ingredients:

Apple Cardamon:
3 lbs, (about 6) honey crisp apples, peeled, cored, and sliced 1/4-inch thick
1/2 cup light brown sugar
1/4 cup sugar
1 Tbsp flour
1 Tbsp freshly squeezed lemon juice
1 tsp allspice
1/2 tsp cardamon

Date and Cranberry:
2 cups dates, pitted
1 cup cranberries
1/2 cup sugar
2 Tbsp butter

Crumble:
3/4 cup butter, room temperature
3/4 cup oats
3/4 cup light brown sugar
3/4 cup all-purpose flour
1/2 tsp allspice
1/4 tsp cardamon

Directions:
Preheat oven 350F / 180C.

In a sauce pot add dates, cranberries, 1 cup water, and sugar. Bring to a gentle simmer and cook for 10 minutes, mashing the fruit as it softens, until the mixture thickens. Remove from the heat and use an immersion blender to blend until smooth, then stir in 2 Tablespoon butter until fully combined.

For the crumble mix together butter, oats, light brown sugar, flour, allspice, and cardamom until crumbly.

In a casserole dish or cast iron skillet layer the apples evenly, spread the date and cranberry mixture over the top, and finish with the crumble mixture. Bake for 50–60 minutes, or until golden on top and bubbling around the edges.

Delicious when served with Vanilla Custard, and Three Ingredient Vanilla Ice Cream
