Cardamon Luxury Fruit Soda Bread with Orange Butter

Serves: One Loaf | Prep: 15 min | Cook: 50 min

Ingredients:

Cardamon Luxury Fruit Soda Bread:
1 3/4 cup buttermilk
1 egg
3 1/2 cups all-purpose flour, plus 1 Tbsp
3 Tbsp sugar
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp ground cardamon
4 Tbsp cold butter, cubed
1 cup dried luxury mixed fruits

Orange Butter:
1/2 cup butter, room temperature
2 tsp orange zest
1 Tbsp freshly squeezed orange juice

Directions:
Preheat oven 350F/180C. Grease a Dutch oven or a cast iron skillet.

In a small bowl, toss the dried luxury mixed fruit with 1 tablespoon of flour to lightly coat, then set aside.

In a jug, whisk together the egg and buttermilk until well combined.

In a large mixing bowl add flour, sugar, baking soda, baking powder, salt, and ground cardamom. Mix to combine. Add the cold butter and rub it in with your fingertips until the mixture resembles coarse crumbs and starts to come together. Pour in the buttermilk mixture and gently stir with a wooden spoon until just combined. Fold in the floured mixed fruit.

Turn the dough out onto a well-floured surface. With floured hands, gently bring it together into a large round. Place the dough into the prepared pan and bake for 50–60 minutes, until the crust is deep golden brown and the loaf sounds hollow when tapped on the bottom.

Make the orange butter by mixing butter, orange zest, and orange juice together.
