Gorgonzola Walnut Crackers

Ingredients:
Gorgonzola Walnut Crackers:
1/2 cup butter, room temperature
4 oz gorgonzola cheese, room temperature
2 eggs, divided
1/2 tsp pepper
1/4 tsp salt
1 1/4 cup all-purpose flour
1/2 cup walnuts, finely chopped
Directions:
In a food processor, pulse together butter, cheese, one egg, salt, and pepper until smooth. Add the flour and pulse again just until the mixture comes together into a dough. Turn the dough out onto a lightly floured surface and shape it into a ball. Cut the dough in half and roll each half into a log about 1-1/2- inches wide and 6-inches long.
Spread the finely chopped walnuts onto a flat plate. In a small bowl, whisk together the remaining egg with 1 tablespoon of water to make an egg wash. Brush each log with the egg wash, then roll them back and forth in the walnuts, gently pressing so the nuts adhere. Wrap the logs tightly in plastic wrap and refrigerate until firm, at least 4 hours.
When ready to bake, preheat the oven to 350F/180C. Line a baking tray with baking paper.
Unwrap the dough and slice it into rounds about 1/4 to 1/2-inch thick. Place the slices on the prepared tray, spacing them about an inch apart. Bake for 15–20 minutes, or until the edges are golden brown. Remove from the oven and let them cool on a wire rack before serving. Serve room temperature.
