Dark Chocolate Peanut Butter Stuffed Dates

Ingredients:

Dark Chocolate Peanut Butter Stuffed Dates:
20 dates
1 cup chunky peanut butter
4 oz dark chocolate
1 Tbsp coconut oil
Sea salt

Directions:
Line a baking tray with baking paper and set aside.

Using a small knife, split the dates in half lengthwise, being careful not to cut all the way through, then remove and discard the pits. Gently open each date and fill the center with chunky peanut butter, pressing it in slightly so it stays in place. Arrange the stuffed dates on the prepared tray and place them in the freezer for 5–10 minutes to firm up.

While the dates are chilling, melt the dark chocolate and coconut oil together in a heatproof bowl set over a pot of simmering water (double boiler), stirring until smooth and glossy. Remove the dates from the freezer and, using a fork, dip each one into the melted chocolate, turning to coat completely and allowing any excess chocolate to drip off. Return the coated dates to the tray, sprinkle with a little sea salt, and place back in the freezer until set.

Store in the freezer or refrigerator, depending on your preference.
